The vacuum block forming column compacts the chips coming from the cheddaring machine to obtain homogeneous cheddar cheese blocks. The curd is introduced under vacuum through the upper part and is compacted during its downward movement, achieving a uniform structure. The system incorporates guillotine-type cutting and automatic bagging, and it is made of food-grade stainless steel to guarantee maximum hygiene. It also includes vacuum control, CIP system, adjustable elevator, vacuum pumps, and centralized control to facilitate its integration into automatic production lines.
